Since the doc prep fee is a part of the Adjusted Origination Charges in box 1 of the GFE, how should it be reflected on the HUD? (i.e., can it be placed in the 800 series of the HUD?)

Charges in Block 1 of the GFE transfer to Line 801 of the HUD and they are not itemized.

So on line 801, list the fee, but do not put the amount?

No. YOu do not itemize the fee. That includes naming it on the line. It's included in the origination fee.
