Otherwise fresh tortillas from your grocery store work just fine, put one in a hot pan sprinkle with shredded cheese and other fillings, top with another tortilla and flip when the first side browns.

they are simple but I have seen quesadilla (sp) makers at Wal-Mart.

You could use green peppers, onions, mesquite chicken, taco meat, lots of things!

ps......I know these things because i am so fat.

I used the chipotle sauce recipe I posted earlier with shredded chicken and some brown rice to make my version of a quesadilla. I don't like cheese, so I didn't add any but I would imagine that most people would like that. It was kind of a bbq chicken and rice quesadilla.
