omg, DD, you've GOT to try that! We do turkeys on the grill all summer. It's so easy and tastes great. Just don't try to use the carcass for soup. Smoked turkey broth is pretty awful. Just sayin'.

We used to grill turkey a lot with the Weber. Very easy to do and frees up the oven. We've always basted the turkey on the grill as we would an oven roasted turkey. It you are grilling the turkey you can use the drippings for gravy and the carcass for soup and it is wonderful. Smoking the turkey with the Weber smoker gives a different result and I would not use the drippings for gravy or the carcass for soup.

Frying two turkeys plus whatever else dad and myself decide to fry. We've done cornish game hens and spiral sliced ham in the past. Deep fried ribs, deer sausage and corn on the cob are also excellent.

Sarah and Truff - how do you grill a turkey? I'd love to try a turkey breast, but I haven't experimented that much with my Weber. We just got it this spring.

Did anyone see the Thanksgiving cook-off where the family used cheesecloth over the turkey? I think I'm going to try it. It's supposed to help keep the turkey moist and the skin from browning too much. Of course, they didn't mention how often you have to baste it.
It's either going to be the cheesecloth or those cooking bags (which should be easier to use).

We use the cooking bag. Never had a dry turkey. We use the honey suckle white with the "pop up" thing. Thne test the temp whenit pops.
TR,
When doing the turkey on the grill, you have to use a pan of some type wouldn't you, What happens to all the juice?
(I always buy up turkeys and freeze them after ThanksGiving when they go on sale, and I would try it on one of these)

When I grill a turkey or a chicken I use a roasting rack and place that inside a pan (9X13 cake pan or you can buy a special roasting pan). Put the bird on the rack and put it on the grill. The juices from the bird will be collected in the pan. I usually add water to the pan as needed to keep the drippings from drying up. I also baste my bird with a wine and melted butter mixture. I believe the timing on the bird is pretty similar to oven roasting if you use a charcoal grill. A gas grill is much faster.

I've been checking wikipedia and the only reference I've found so far was to someone using a dishwasher to cook a fish filet
but I swear there was someone on a local morning radio show explaining how he used his dishwasher and the heat and steam it creates to cook food
it could be I was hallucinating at the time which would explain my lack of production that day at work

I've actually heard of people using a dishwasher to cook fish also. I've not heard it being used for a turkey though.

I've never actually measured it but for a nice sized turkey maybe a stick of butter and a couple of cups of wine? I heat it on the stove until the butter is melted and go from there!

I have neve liked sweet potatoes before but now that I have had them without all of the sugar and marshmallows, I think they are wonderful!! Last night I cut some up into wedges, mixed with olice oil, garlic salt and paprika, baked at 500 for 20 mintues, turning once. They were heaven!!

If you plan on using the juices for gravy I would check the pan every once in a while as the drippings will dry up. If you aren't going to save the juices for gravy, then you really don't need to put the roasting rack in the pan.

We cook our turkey with the breast down. Got this from my mother. That way the breast is cooking in all of the juices and doesn't dry out. It makes it hard to see the pop=up thing pop up though. It really doesn't matter because we cook ours for what seems like forever.

Sounds good Tigg, and I have both. What's the recipe?
3 cups sliced peeled sweet potatoes (I plan on roasting mine - just under done) 3 cups sliced peeled tart apples (about 2 large) 3/4 cup packed brown sugar 3/4 tsp ground nutmeg 1/4 tsp ground all spice 1/4 tsp salt Dash pepper 3 tbsp butter In a greased 1 1/2 quart baking dish, layer half of the sweet potatoes and apples. Combine the brown sugar, nutmeg, allspice, salt and pepper; sprinkle half over potatoes and apples. Dot with half the butter. Repeat layers. Cover and bake at 350 degrees for 15 minutes. Baste with pan juices. Bake uncovered, 15 minutes longer or until the apples are tender. (8 servings)

Sweet tater/apple thingy the way my friend does it:
Boil (or pressure cook) taters in skins until just soft (not soft enough to mash, though!). Cool, peel, and cut into 1/4 or 1/2 inch slices. Core green apples, slice thin and toss in lemon juice to prevent turning. Arrange slices in buttered baking dish, alternating taters and apples. In small saucepan, melt 1 stick real butter, stir in 1/2 brown sugar, tbsp cinnamon, and dash each allspice, nutmeg, and salt. Remove from heat and stir in 1/2 c heavy cream. Pour mixture over slices, bake at 350 until slices are soft and apples brown slightly. Top with crushed granola, pressing lightly into the dish. Return to oven for another 3-5 minutes (he sometimes adds a little more butter over the granola).
Disclaimer - all amounts approximated - he and I both cook by feel or eyeball. No measuring.

Yep. One of the guys in the dressage club here. He used to be a private chef/caterer.
BTW - he uses granola with almonds and raisins to top that stuff with. It's YUMMY.
ETA: I plan to make it with chopped pralines scattered over the top. Why spare perfectly good calories?
