I think I'm afraid to try anythign new without knowing if my skillz are good ernough to pull it off. I rub butter on and under the skin, sprinkl;e with pepper and garlic salt, then stick it in the NuWave oven. 14 pound turkey done in 2 hours (and browned!).
But all this talk abotu brine and bacon makes me want to try somethgin different next year ::drooling emoticon::

Twas the night of Thanksgiving, but I just couldn't sleep. I tried counting backwards, I tried counting sheep. The leftovers beckoned - the dark meat and white, But I fought the temptation with all of my might. Tossing and turning with anticipation, The thought of a snack became infatuation. So, I raced to the kitchen, flung open the door And gazed at the fridge, full of goodies galore. I gobbled up turkey and buttered potatoes, Pickles and carrots, beans and tomatoes. I felt myself swelling so plump and so round, 'Til all of a sudden, I rose off the ground. I crashed through the ceiling, floating into the sky, With a mouthful of pudding and a handful of pie. But, I managed to yell as I soared past the trees.... Happy eating to all, pass the cranberries, please. May your stuffing be tasty, your turkey be plump. Your potatoes 'n gravy have nary a lump. May your yams be delicious, your pies take the prize. May your Thanksgiving dinner stay off of your thighs. HAVE A HAPPY THANKSGIVING

I used Alton Brown's recipe for brining but topped it with a bacon blanket. Turned out great and moist! The sourdough stuffing/dressing was decidedly sour so I'll adjust that next year. All and all a wonderful Thanksgiving with friends and family.

A coworker was telling me about a show she watched and they made potato pancakes stuffed with turkey. Sounds good! I think adding to this thread would be tops.

Nope. I buttered under the skin, on the skin then put the bacon blankie over it all, wrapped the wings and legs with bacon. And put a pound of bacon in the green bean casserole.
