I found the hardest thing to master when I first got married was having everything be done at the same time. The best thing about cooking is it is as personal as you want it to be. If you want to experiment, go for it! If you feel safer with a recipe, that's just fine. Cooking is fun and easy - and rewarding - if you want it to be. For me it's a haven and sure fire stress reliever! Good Luck, Kitt!

If I'm following a recipe I always measure. If I'm experimenting, I don't. When I bake fish - I love to experiment. Same with stir fries.

I need a good recipe for Saturday for fish. Either tilapia or salmon or haddock I think. Any suggestions Becca?

The trick to successful experimenting is to take a dish you know well and put a twist on it. For example, take a basic chicken marsala recipe and turn it into chicken with port sauce or a red wine reduction. Start with small changes. I've tried making changes to casseroles, which you know are hard to mess up, and it never works out. I'll stick to measuring. I once put a whole block of extra sharp cheddar in a casserole, and the thing was flavorless. That's when I gave up on experimentation.

Don't think so Pale. I don't recall seeing it. Maybe some salmon it it's not too pricey.

Kitten, what's the push for the spices and cooking? Got a new audience for your cooking?
I'm my new audience. I realized yesterday that, quite without trying, I haven't eaten any processed/prepackaged "food" since the beginning of the year, and I want to keep it that way. The only way to do that is to make it myself.

I had been thinking about it, but didn't know if I could go fully with no processed food. I knew I was eating better, but hadn't realized to what extent.

Nope, not really a fish person. Maybe RR Joker will stop by though - I think they do a lot with both tilapia and salmon at her house.

If you have "The Joy of Cooking" cookbook, they have a really good recipe for Orange Roughy - which is similar to Red Snapper without as much fat. It could probably be translated to other fish.
