Stealing from Okie...cause it's already out there.
Spicy Bean Salsa (aka Cowboy Caviar)
INGREDIENTS:
1 (15 oz) can black-eyed peas
1 (15 oz) can black beans, rinsed and drained
1 (15 oz) can whole kernel corn, drained
3 stalks chopped green onions
½ chopped cucumber
1/2 cup chopped green bell pepper
1 (4 oz) can diced jalapeno peppers
1 (14.5 oz) can diced tomatoes, drained
1/2 cup Lite Spicy Italian-style salad dressing
1/2 teaspoon minced Garlic
Pinch of Chili Pepper
Pinch of Cumin
DIRECTIONS:
1. In a medium bowl, combine black-eyed peas, black beans, corn, onion, green bell pepper, jalapeno peppers and tomatoes. Season with dressing, garlic and spices; mix well. Cover, and refrigerate overnight to blend flavors.
You can really change up the veggies in this. My friend uses black olives and skips the corn.
(Add more Chili Pepper, Garlic & Cumin to taste, remember that tastes get stronger overnite!)
Also, I make a relish to go on top of most any 'field' peas that makes ANY pea delish! I'd have to dig up the recipe tho...
