Bacon and shallot marmalade:

Half a package of thick cut bacon diced
6 -8 large shallots thinly sliced
4 garlic cloves minced
1/4 cup maple syrup
1/4 cup brown sugar
1/4 apple cidar vinegar
shaved basil

cook bacon to crisp then remove leaving fat;
add shallot and garlic and cook to translucent;
add vinegar to deglaze then add syrup and sugar;
cook stirring occasionally to reduce to a thick consistency.

While you roll out the dough place the marmalade mixture in the freezer to solidify it. Once the dough is ready and the mixture is thick scoop out and place in mounds on the dough (it will spread when cook and make the "sauce." Top with fresh sliced moz and cook at 450 for about 7 - 10 minutes. I top with shaved fresh basil.

This pizza is like crack. The marmalade recipe makes more than you will need for the pizza and it is also great on burgers and pulled pork.



YUMMMM - I think I will borrow this recipe...I can almost taste it with a little bit of goat cheese added to it...YUMMMMMMM

Last night I went out for dinner and had a Salmon BLT. It was just an ordinary BLT with a filet of grilled salmon and some yummy peppercorn mayo. Delish! I never thought to add salmon to a BLT, but wow. Definitely will have to try this at home.

Tonight, I'm going to one of those home business parties for a friend. Something called Shaklee and since I'm supposed to be there promptly at 6pm, I'm hoping they are planning to feed me something (at least snacky stuff) because I'm going straight from work. laugh

Tomorrow night, I'm planning to do BBQ chicken and an aluminum foil packet of potatoes and veggies drizzled with olive oil and oregano and garlic powder. I wrap it all up and toss it on the grill while the chicken is cooking. It comes out perfect on the timing. Deeeeeelicious.
