Having spent the last 30 years in New Mexico......how about some Caldillo (Green Chile Stew)
Brown stew meat or elk or venison or oryx in a large pot. Add potatos (cut in 1 inch cubes) Add diced onions Add green chilies (cut in thin strips or diced, if preferred) Add Rotel or cubed tomatoes - optional Add water to cover everything. Season with salt, garlic, pepper.
Simmer until done. I leave mine on the stove for 3 or 4 hours sometimes. Othertimes I cook it in a Crockpot. To get a little thicker, boil a little.
Serve with fresh flour tortillas - with butter. UMMMMMMMMM

I've seen lots of nice posts, looking forward to chatting with yall! Welcome aboard, Jennifer! There's a lot to be enjoyed here....and some that needs to be...welll...I'll just say ignored! LOL! Now HERE'S a super easy recipe that we love!! Quick and Easy Chicken Enchilada Soup (Either stove-top or slow-cooker) 1 can cream of chicken soup 1 can nacho cheese soup *** 1 can enchilada sauce 2 cans chunk chicken, drained 1 2/3 c. milk (more if you prefer a thinner soup) Mix together in saucepan or slow-cooker. Allow to heat through. Often better the second day. *** I prefer to use a can of cheddar cheese soup and a can of salsa verde or Rotel tomatoes and green chiles. Serve with rice, chips, crackers, sour cream, shredded cheese, jalapenos….whatever!

Here is a good Baked Potato Soup recipe.
Baked Potato Soup
2/3 cup butter or margarine 2/3 cup flour 7 cups milk 4 green onions, sliced thin 4 cups baked potato, peeled and cubed 12 strips cooked bacon, crumbled 8 oz. sour cream 1 1/4 cup shredded cheddar cheese 1/4 tsp. pepper 3/4 tsp. salt
In a large kettle, melt butter. Stir in flour and cook until smooth. Add milk and continue cooking until thickened. Stir in onions and potatoes. Bring just to a boil. Simmer for 5 minutes stirring constantly. Add bacon, sour cream, cheese, pepper and salt and stir until cheese is completely melted. Makes 2 1/2 quarts and serves 8-10.

Mary, don't do it! It'll wreak havoc on your insides. My SO did that diet years ago and it didn't create sucessful results. but did he lose weight?
